Finding balance to be the best I can be

I constantly read about getting the right balance of exercise and nutrition. I love to eat healthy and I think I do most of the time. I also love a sweet treat every once in a while and I have it! I don’t want to feel guilty about it. I know I have a good balance going. (Plus, we know the 80:20 rule… what goes into your mouth accounts for 80% of how you look!) I also want my kids to see that I eat a variety of healthy foods (and unhealthy foods, some of the time)! However, there is much more than food that I try to balance on a daily basis.

11201166_10101529393764662_8406366058289373208_n(1)I try to find the right amount of time to spend with my kids. I don’t actually mean time I’m with them, but more importantly, quality time. (I think this is called mom guilt…) yes, when I’m with them I make food (constantly), do laundry, vacuum the floor, sneak in a DVD workout, and look at my phone, just to name a few! The quality time I’m talking about is reading a book, playing peek-a-boo, fighting like a ninja (haha.. they are slightly obsessed with the Ninja Turtles), or making a craft.

image1I try to find the right amount of time for myself. When I get any time for myself I usually run (literally) as fast as I can out the door and onto the road! I don’t want to be JUST a runner though. I’ve always considered myself an “all-around” when it comes to sports and working out. I like to throw in a bike, swim, interval, and lifting workout! I love to play tennis, pass a soccer ball, or start a family softball game! I don’t really make time to go shopping, read for fun, or make my hair look nice (it’s way to humid to attempt it right now anyway)!

image2The list goes on and on about finding balance. I make an effort to spend enough time with my husband, extended family, and friends. I struggle with not worrying too much about every little thing, but just doing something positive about my worries and concerns! I keep striving to be better, even though I know I will never be perfect, I hope to always improve and be the best I can be!

Blueberry Walnut Oat Cakes

IMG_3089We were able to spend the day with Nate’s parents.  While there, Denny, Ellie, and Jayce were happy to pick (and EAT) fresh blueberries!  Even though they weren’t all blue yet, we were able to get quite a few!  I decided to make my favorite Oat Cakes and they tasted amazing with these blueberries!  We all would agree!

Blueberry Walnut Oat Cakes


  • 2 cups oats
  • 1 banana
  • 1 cup blueberries
  • 1 cup walnuts
  • 4 eggs
  • 1 Teaspoon vanilla
  • 1 Teaspoon cinnamon

What to do:

Blend oats, banana, and walnuts.
IMG_3047In a mixing bowl add beaten eggs, vanilla, cinnamon, and everything in the blender.
Mix well.  Lightly stir in blueberries.

In lightly greased skillet cook mixture just like pancakes.

IMG_3065If you have extra, keep them in the fridge for an easy snack! I even eat them cold!

This makes about 20 medium sized cakes.  One serving is 5 cakes.
If you are following the 21 Day Fix eating plan then one serving is:
💛1 yellow, 💜1 purple, ❤️1/2 red, 💙1/2 blue

Too bad Jayce can’t eat them yet!
But big brother fed him oatmeal cereal while I was making these!


Healthy Watermelon Cake

IMG_2778My mom and I are both eating healthy foods.  We are currently following the 21 day fix eating plan and drinking Shakeology (YUM!)

I asked if I could bring dessert to her birthday party for a lot of our extended family and some of her friends.  I was planning to bring an almond torte cake, her favorite!  However, she said she wasn’t really planning on having dessert, but I could bring something if it was healthy!  No dessert for a birthday party?!  I totally get where she is coming from, because it is easier to eat better foods if you aren’t tempted.  But we needed a cake!

Well this is what I came up with… A toasted almond watermelon fruit cake!

IMG_2750It looked amazing and tasted delicious!  People were even going back for seconds…. I heard them say, “I can have more, it’s just watermelon!”  I think sometimes everyone likes a healthy option!  I definitely recommend it!

What you need:

  • watermelon
  • cool whip
  • 1 tablespoon butter
  • 1 cup almonds
  • fruit to decorate (I used strawberries and blueberries)

What to do:

  • Cut the sides (rind) of the watermelon off so you are left with one big piece of watermelon.
  • Spread cool whip over all sides of the watermelon.
  • Melt butter on stove and add almonds.  Toast about 10 minutes on low heat.  Stir frequently being careful not to burn them.
  • Once almonds are cool put on cake with fruit to decorate.

I think you will be able to tell that I get my love of working out from my mom!  She wanted to celebrate her 55th birthday with a lot of working out!

I absolutely love how many people joined in!  Even Denny, Ellie, and little Jayce in the stroller! Plus, everyone at the park wished her a happy birthday!

As if that wasn’t enough… it’s my dad’s HALF birthday today… so he did half of her workout!  (Then played on the playground with the kiddos!)


Perfect way to celebrate a birthday!! Now, time for a pizza party… at 5:50!

I am a Runner


I am a runner.

I also love to swim, bike, play tennis, play backyard games, and more…but I will always be a runner, first and foremost.

There is nothing else like it! Nothing else makes me feel as good. Running improves my mood, attitude, and overall outlook on life. Trust me, you can tell if I need to run! I have all types of runs (planned, spontaneous, slow, hard, group, fun, quick, tired, motivated, hilly, sluggish, never-ending, quiet, long…I could go on and on) but they are all good in the end! I usually don’t know exactly what type of run I will have until I start. None of my runs are ever exactly alike but they all end with me in a better mood. I can then be a better person. I have been running for so long and know so many runners it feels like my normal. Running has changed my life for the better!

But here’s the thing: after having three (wonderful!) children, running wasn’t enough anymore. I wanted to be stronger, lose a few pounds, and tone up. I was skeptical about Shakeology, but I thought maybe the DVD workouts might be good. So I borrowed T25 from my cousin and I loved it!! I felt so much stronger. I am toning muscles on my body that I didn’t even know I had! I asked my husband to buy me the PiYo DVDs for Mother’s Day…and I loved those too! I got so excited and bought the 21 day fix extreme. Yep, loved those workouts too! As I got stronger from my DVD workouts I even saw my running improve. Seven minute miles for a 5 mile run?! A 5k PR of 20:23?! I haven’t been that fast for years! How is this possible? I ran competitively in high school and college but now I’m hitting personal records for every distance I run!

This was when I started thinking, “Maybe Beachbody is for real…I guess I could give Shakeology a serious try and see if it exceeds my expectations too. Now, I should tell you that I’ve had protein shakes before. I tried to use Whey protein shakes as meal replacements but I was always hungry after. One of my favorite things about Shakeology is that it feels like a milkshake! I don’t feel like I need another treat all day.

I’m sure there are people who don’t need the shakes at all.

I bet there are people who would benefit from the shakes for short periods of time, just to help a little.

I still don’t know if I will drink Shakeology all year round. I’ll figure out if I need it as I go! But I’m SUPER happy that I tried it! (I often wish I would have tried it a lot sooner!)

My honest thoughts on Shakeology

Beachbody and Shakeology is not a diet plan. Instead, it is a healthy lifestyle choice.  Yes, I am active (I love to workout) and I need good food to fuel my body. triI also have a huge sweet tooth… when I drink the chocolate shake in the morning I feel like I have had my fill of sweets for the day and I can focus on eating better foods. It’s a win-win!imageSince starting to drink the shakes I have also had more energy and even have been able to wake up earlier to get a head start on my day before my little crazy kids even wake up! I have never been able to beat their 6 am wake up time until now! Plus, I have energy that lasts all day!

Hometown 4th of July 5k Race


I was so pumped to do this race even though I just decided yesterday morning that I would run it. It is perfect for me to do close to home races right now so I don’t have to be away from my littlest man for too long! I was very excited that my kiddos and husband were there to watch me run. My little brother ran too!

Getting ready before the race is a little different than before kids! My little guy (who is 8 months today) likes to eat every 2 hours. I did still manage a good 2 mile warm-up.

IMG_0691I had the absolute best number for Independence Day… 76! I should have known it was going to be the perfect race!

IMG_0743The start was down a very steep hill and the finish was up the same steep hill. I started out running fast and tried to keep up the pace!

IMG_0714I was so excited to get first woman overall with a time of 20:23! This is actually my fastest 5k time! I was really hoping to break 21 minutes based on my training times. I am so excited everything came together and I was able to do it! I was out of breath for most of the race and the hill at the end felt extra hard. I know I will be sore tomorrow!
