We were able to spend the day with Nate’s parents. While there, Denny, Ellie, and Jayce were happy to pick (and EAT) fresh blueberries! Even though they weren’t all blue yet, we were able to get quite a few! I decided to make my favorite Oat Cakes and they tasted amazing with these blueberries! We all would agree!
Blueberry Walnut Oat Cakes
- 2 cups oats
- 1 banana
- 1 cup blueberries
- 1 cup walnuts
- 4 eggs
- 1 Teaspoon vanilla
- 1 Teaspoon cinnamon
What to do:
In lightly greased skillet cook mixture just like pancakes.
Flip after small bubbles appear.
These are my absolute favorite!
If you have extra, keep them in the fridge for an easy snack! I even eat them cold!
This makes about 20 medium sized cakes. One serving is 5 cakes.

💛1 yellow, 💜1 purple, ❤️1/2 red, 💙1/2 blue
Too bad Jayce can’t eat them yet!
But big brother fed him oatmeal cereal while I was making these!
