This was my first time making spaghetti squash! I couldn’t believe how easy it is to make and how delicious! Plus, there are so many things you can do to change it up! We kept it pretty simple but I’m excited to try more ideas.
CAREFULLY cut the spaghetti squash in half. (You can warm it in the microwave for about 2 minutes to make it softer.)
Lightly brush with Extra Virgin Olive Oil.
Bake face down at 350 degrees for 40 minutes.
Shred (scrape) sides with a fork.
Top with whatever you like (we like spinach, tomatoes, cheese, and even pepperoni) and cook at 350 degrees for an additional 15-20 minutes.
Breakfast is SO important for a good start to the day. Skipping meals, ESPECIALLY BREAKFAST, can make it much more difficult to maintain a healthy weight/lose weight. By skipping breakfast our bodies tend to need more food later. I love to eat a healthy and filling breakfast to start out the day! Here is my new favorite:
Cafe Latte Overnight Oats
1 cup oats
1/2 cup plain 0% fat Greek yogurt
1/2 banana (mashed)
1 tablespoon chia seeds
1 tablespoon natural peanut butter
1 cup unsweetened vanilla almond milk
2 tablespoons Cafe Latte Shakeology
Combine first 6 ingredients in a closed jar.
Let mixture sit 4-12 hours in refrigerator.
When ready to eat, stir in Shakeology.

I have completed the 8 week program, but I’m not stopping there!
I took things a little easier this past week due to a minor cold and the snowy weather.
The program has the option after the 8 weeks to choose a 30 day continuation plan. You can choose the HAMMER or CHISEL workouts. I am definitely choosing the Hammer! While I will miss Autumn (trainer that leads Chiselworkouts and 21 Day Fix), I am excited to focus more on building muscle, strength, and power. I feel in combination with running these workouts benefit me most!
