This is going to be a new regular dinner in our house! It has all clean/healthy ingredients, it is easy/quick to put together, and everyone LOVES it! Plus, you can choose to make it in the oven or crockpot. When I make it I make extra because it is great for leftovers or to freeze for later!
- 3 pounds lean ground turkey
- 5 egg whites
- 2 cups fresh salsa
- 4 cups fresh spinach (chopped)
Combine all the ingredients in a bowl and mix well. Everything should start to stay together to form loaves. I made 3 medium sized loaves and put on a pan. (It helps to put a dent in each loaf to make sure it is cooked thoroughly.) Brown at 375 degrees for 20 minutes. Then remove from oven and cover each loaf with foil. Cook at 375 degrees for an additional 45 minutes.
Check to see that each loaf is cooked throughly (it should have an internal temperature above 160 degrees). *If you choose to make in the crockpot, lightly coat with EVOO and cook on low for approximately 8 hours.
We enjoyed our meatloaf slices with sweet potato fries and asparagus!
