We did a lot of playing and partying with family and friends.  Then this BIG guy slept over at Gigi and Poppy’s house for the FIRST time away from his mom and dad!  IMG_7924.PNG

We got to have a long date night… and sleep in!  Of course, we fit in lots of working out together!love.png

There was a lot of good food too!  Some healthy and some not so healthy… but it’s all about balance!  We created a new Shakeology recipe that is delicious!  Definitely a must try!   cafe berry latte.jpg

Almost Summer

Today was little Ellie’s last day of her first year of Preschool!  We walked this cutie to school!IMG_3511.jpeg

Then played and played after school… we both can’t believe it’s over!  We came home and whipped up this delicious avocado apple dip!  Yum… my sweet tooth tells me to never make guacamole again and instead ALWAYS have this!  AVOCADO APPLE DIP.jpg

I know Ellie will miss school this summer… but we have a fun summer planned and the BEACH in 16 days!  A couple people have asked if I will still be “running” my monthly group… and the answer is YES!  One of the best things about being a Beachbody Coach is that I can do it from anywhere there is wifi!Image-1-1

Apple Cinnamon Bites

We have been busy around here!  My sister is home for a few days – until she leaves for her awesome summer job – so we have been squeezing in lots of our favorite things!  Obviously running…IMG_5638.jpeg

…and some baking!  All healthy things of course! 🙂  One of my biggest tips DON’T BAKE WHEN YOU’RE HUNGRY!  And so before we sipped on this deliciousness… IMG_7962.jpeg

I would definitely recommend trying these!  They taste just like a cookie and they aren’t too bad for you!

Healthy Apple Cinnamon Bites (makes 15 cookies)

Ingredients:

  • 1 cup oats
  • 3/4 cup whole wheet flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 egg
  • 1 apple (cut in small chunks)
  • 1/2 cup agave
  • 1 teaspoon vanilla
  • 2 tablespoons coconut oil

Directions:  

  1. In a large bowl whisk dry ingredients together (oats, flour, baking powder , cinnamon, and salt).
  2. In a small bowl whisk wet ingredients together (egg, coconut oil, and vanilla).  Stir in agave.  -This is where little ones can help out!IMG_6013.jpeg
  3. Fold dry ingredients into wet.
  4. Stir in apple chunks.IMG_3510.jpeg
  5. Refrigerate dough for 30 minutes.
  6. Bake at 325 degrees for 13-15 minutes.  IMG_7125.JPG

21 Day Fix and Running- Halfway point

Ok, so after finishing my marathon in April I am running less miles and focusing more on cross training.IMG_6868.JPG

I just don’t feel like running a ton of miles but I still want to workout (obviously 😉 )  This is where the 21 Day Fix fits in perfectly.  It is tough but still doable and I don’t get into a workout rut!  I thought doing these workouts would be perfect because I started LOVING Beachbody after doing the 21 Day Fix Extreme (AND had awesome results).  There are SO many great moves… which makes it perfect for cross training!  Like running in place while holding a weight… HARD!  Haha, but I love my little trampoline creeper 😉  IMG_7092.jpeg

The double workouts (most days) have been wiping me out… but I feel good/stronger!  Little Jayce and I may fuel differently… IMG_4674.jpeg

but we both finish our favorites as fast as we can… HAHA!  IMG_8628.jpeg

It makes me happy!

Yep, Shakeology makes me happy!  I feel good and I can do the things I want!  I may wear comfy clothes A LOT… but why not?!  If you’re a Shakeo fan… try out this recipe!  IMG_4241.jpeg

What else makes me happy?  My family!  Especially when we all enjoy doing the same things and we can do them together!  I’m talking about RUNNING 🙂  IMG_9100.jpg
