Healthy Zucchini Banana Bread

I just finished up teaching two classes at the local community college for upper elementary grades.  The classes combined a lot of fun science things into a few short days.  While it was fun to get out (wearing real clothes) and feeling appreciated (a student gave me this flower), I missed my little kids!  IMG_5932.jpeg

So, we’ve been doing a bunch of the experiments together now!  IMG_2396.jpeg

Then we started experimenting with zucchini’s! 🙂  I am on a mission to eat them all up from our garden!  This is a good one:  IMG_1155.JPG

Zucchini Banana Bread

Ingredients:

  • 1/2 cup banana (mashed)
  • 3/4 cup zucchini (grated)
  • 1 egg
  • 2 tablespoons honey
  • 1 tablespoon coconut oil
  • 2 teaspoon vanilla
  • 1/4 cup nonfat plain greek yogurt
  • 1 tablespoon chia seeds
  • 1 1/4 cup flour
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Directions:

  1. In a large bowl mix banana, zucchini, egg, honey, oil, vanilla, yogurt, and chia seeds until well blended.
  2. In a medium bowl whisk together flour, baking powder, cinnamon, and nutmeg.
  3. Gradually mix dry ingredients into the large bowl.

*Bake 1 loaf at 325 degrees for 35 minutes.

or

*Bake 12 cupcakes at 325 degrees for 25 minutes.

Anniversary Bike Trip

Every year we try to do something really special for our anniversary.  To be honest, a bike trip is my (and I think his 😉 ) FAVORITE way to celebrate.  This was our second overnight trip for our anniversary (we also did it to celebrate our 5th).  I’m sure we would have done it more often… but a lot of the past years I had a big pregnant belly or a new baby that we couldn’t leave.  (7 years ago was my first overnight bike trip and I was pregnant… but was super careful not to overdue it!)

We started in Ohiopyle with everything we needed – bikes, a change of clothes, packed lunch, snacks, and water.   IMG_3544.jpeg

Some parts of the trail were harder than others.  (Thankful that he carried my bike through this!)IMG_7121.jpeg

We drank Hydrate (Beachbody Performance- the official sports nutrition supplement of Ironman Triathlons) which really helped us feel good the entire way, especially with the heat and humidity!  Oh, AND check out my new Garmin watch!  For our anniversary we gave each other matching watches!IMG_7151.jpeg

But we finished the 57 miles on the first day strong!  You can check out my Strava data here.  I know part of the reason we felt so great is that we had Beachbody Recover as soon as we checked in to our bed & breakfast.  It held us over until dinner and helped our sore/tired muscles (plus it tastes like a delicious treat)!  IMG_9534.jpeg

We walked to the most perfect Mexican restaurant and took our time eating (something that would be hard to do with 3 littles)!  I even had a frozen margarita!  IMG_2767.jpeg

The next morning we left our cute little bed and breakfast to do it all again 🙂  IMG_0358.jpeg

But maybe just a few tunnels… they FREAK me out!  Especially the ones that don’t have any lights!  IMG_2900.jpeg

I love the fact that everything we need for the 2 days fits on our bikes.  We will definitely be back for more!  It was the best way to celebrate 8 years together.     IMG_3612.jpeg

Butler Triathlon

Even though I know I am and always will be a runner at heart, I like to do less running in the summer and more swimming and biking.  I love to workout but it is nice to work towards something and see how much you are improving.  Triathlons are perfect for me and like I always say… Cross training is key!

Nothing is better than having your favorite people cheering for you (my husband is also there and taking all of the pictures)!  IMG_6141.jpeg

This was my FIRST open water swim!  IMG_4407

After the first 100 yards I got into a good rhythm and actually wished the swim was longer!  IMG_4075.jpg

The bike course was HILLY.  But I was smiling to my cuties who were at the end!  IMG_6922.jpeg

I ended up getting first in my age group and 5th overall female.  IMG_2279.jpeg

Then (as if things couldn’t get more perfect) we all changed into our bathing suits and spent the day playing in the water and sand!  IMG_3521.jpeg

Then we celebrated MY birthday!  31 years old and 31 miles (24 mile bike, 6 mile run, 1 mile swim)!  bday.png

Working out/being healthy is a big part of my life and my family.  I do it to feel my best at the start…IMG_6164
