Pumpkin Seeds!

Ok, so I feel like pumpkin seeds are the ultimate win/win!  They are fun and tasty (plus healthy)!  Our kiddos are a bit too small to actually cut the pumpkin but they have fun giving their input and watching!  They wouldn’t pull the seeds out with their hands, but they did use a big spoon!  image2-2.JPG

Once the seeds are out…
rinse and add flavor!  This time I made three different batches: lemon pepper, red hot, and sriracha.  *They would also be great with honey, cinnamon, salt, pepper, garlic… the possibilities are endless!  I put the seeds into a ziplock bag with a little flavor and mixed.
IMG_5438.JPGThen I put them on baking sheets and cooked at 300 degrees for about 1 hour being sure to flip/turn the seeds every 10-15 minutes.  They should be dry and crispy when they are done but not burnt.  I love to eat them warm but also munch on them once they are cool.  IMG_5447.JPG

I also cooked some for an activity at Ellie’s Pre-K class.  The kids had to match the number to the pumpkin seeds to complete the pumpkin puzzle!  We then added the pumpkins together.  They had fun and so did I!  IMG_6309.jpeg

That night Denny used pumpkin seeds to practice his spelling words by using them in his nightly homework for his “Halloween Scene.”  He said that this made his homework really fun!   IMG_7216.jpeg

Salad Ideas & Some Exciting News!

First off- sometimes doing everything I WANT to do is a struggle!  I am still working on keeping the best balance of everything I love… IMG_5541.jpegThe cuteness (and weirdness) help! 😉

We have a bunch of good veggies… add a little grilled chicken and YUM!  I am SO into salads right now, as long as there is a variety of food it looks amazing to me!  IMG_3800.JPGLettuce, spinach, cabbage, broccoli, carrots, avocado, chicken, and sweet potato fries!

August Already!

I LOVE August… summer is my favorite!  I always fit in a lot of fun activities before the school year starts again: a triathlon, amusement parks, pool days, and more.  Another reason to love this time of year is we got married on August 1st! 🙂

We started the month out with a date!  So thankful for my mom (she always offers to watch the kiddos).  We really celebrated last week with an overnight bike trip, but it was nice to have a date night on our actual anniversary.  We went out to delicious dinner then shared a cupcake… IMG_9332.jpeg

and saw a great movie!  It has been quite awhile since we’ve seen an adult movie!  IMG_7491.jpeg

Maybe it was the run I went on (that morning) that had me feeling perfect.  You know how everyone can tell when you don’t get a workout in?  Well, when you have a great one everyone can also tell!  Jayce and I ran 4.5 miles while the other two were at church for VBS… what a perfect day!

Memorial Day Weekend

We did a lot of playing and partying with family and friends.  Then this BIG guy slept over at Gigi and Poppy’s house for the FIRST time away from his mom and dad!  IMG_7924.PNG

We got to have a long date night… and sleep in!  Of course, we fit in lots of working out together!love.png

There was a lot of good food too!  Some healthy and some not so healthy… but it’s all about balance!  We created a new Shakeology recipe that is delicious!  Definitely a must try!   cafe berry latte.jpg

21 Day Fix and Running- Halfway point

Ok, so after finishing my marathon in April I am running less miles and focusing more on cross training.IMG_6868.JPG

I just don’t feel like running a ton of miles but I still want to workout (obviously 😉 )  This is where the 21 Day Fix fits in perfectly.  It is tough but still doable and I don’t get into a workout rut!  I thought doing these workouts would be perfect because I started LOVING Beachbody after doing the 21 Day Fix Extreme (AND had awesome results).  There are SO many great moves… which makes it perfect for cross training!  Like running in place while holding a weight… HARD!  Haha, but I love my little trampoline creeper 😉  IMG_7092.jpeg

The double workouts (most days) have been wiping me out… but I feel good/stronger!  Little Jayce and I may fuel differently… IMG_4674.jpeg

ORRRC Marathon

I was beyond excited for this race that I found out about through a friend!  It was everything I wanted for my second marathon (and first one post-kids!)  It is low-key, small, inexpensive, and not too hilly!  I told my mom about it and she was immediately in!
The 5 hour drive was our time to catch up and it flew by!  We also got to have a relaxing night at my Aunt and Uncle’s house!  IMG_5557.jpeg

I was definitely nervous… but confident in my training!  I really am stronger than ever in my life and it shows when I run.  I feel better and faster!  I was actually running more miles when I trained for the last marathon, however, now they are quality miles AND I’m cross-training with DVD workouts.  These DVD’s work my entire body which has been key in my improvements!    I dropped about 16 minutes off of my previous marathon time!IMG_5029.jpeg

My mom has finished over 20 marathons (with a lot of “clock” times I DREAM about). She  had a great race!  I think it can best be described as happy and consistent!  I am so glad we got to do it together… how special is that?!  IMG_5577.JPG

My race went by quickly!  I don’t usually listen to music at a race but since it was a smaller crowd… I decided to!  Plus, it was nice to know my splits!  There were a few miles of head-on 20 mph winds with hail!  (It felt like little needles all over my face!)  Those miles were not fun, but made the other miles feel even better!  IMG_2917.jpegAlso, my awesome Uncle rode his bike all around the course cheering me and my mom on (he ended up biking over 40 miles)!

My goal was to not only to qualify for Boston, (I needed a 3:35) but also to get under 3:30.  And I did it! I was pretty consistent the entire race, especially considering the wind!  However, I had to pick up the pace for the last mile to make it…and I did!  I knew that I didn’t want to run that far and miss my goal by just a little!

My time was 3:29:32 and ended up finishing 4th female out of 111.  I was 31st overall out of 264 finishers.IMG_5276.jpeg

I will always remember this marathon and that happy times we had! IMG_4581.jpeg

We even got to go see my little sister at her college!  I’ve been wanting to visit her… but this is something that’s hard for me to do with the 3 little ones! IMG_2656.jpeg

Oh, and when I got home late at night the house was decorated! Then in the morning I got lots of smiles and homemade gifts!  IMG_9663.jpeg

Choco-Energy Bites

I love to workout at home with my DVD workouts…IMG_2157.jpeg

…and then hit the road for a run!

But… this leaves me hungry with little time!  I need healthy fast food!  It is all about planning… These are so easy to make and delicious to grab when I need a pick-me-up!

These two love them too (and they also get a little tired sometimes!)  HAHA… going to all those playgrounds is hard work!  IMG_3673

Choco-Energy Bites


  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1/4 cup dark chocolate chips
  • 2 tablespoons chia seeds
  • 1/2 banana (mashed)
  • 2 tablespoons chocolate Shakeology OR chocolate flavored protein powder


  • Stir oats, peanut butter, honey, chocolate, chia seeds, banana, and Shakeology until evenly mixed.
  • Cover bowl with plastic wrap and refrigerate for 30 minutes.
  • Scoop chilled mixture into balls.  Keep cold until serving.
